Skyr

Suele decirse que el Skyr es el yogurt islandés, aunque a decir verdad está más relacionado con la cuajada, ya que se obtiene tras añadir el cuajo a la leche de vaca y filtrar el resultado (tradicionalmente, a través de una tela). La parte líquida recibe el nombre de Mysa, que se toma como refresco, aunque también es usada para cocinar. La parte más sólida, aquella que no ha pasado por el filtro, se llama Skyr, tiene una textura similar a la del yogurt, aunque el sabor es muy distinto, y es muy rico en proteínas y calcio y bajo en grasas.

Ahora, el Skyr es un producto lácteo típico de Islandia, y, como tantas cosas típicas de este país, fue llevado por los colonos vikingos procedentes de Noruega  (y sin duda era un producto popular en el mundo nórdico), aunque en su país de origen se haya perdido la costumbre desde hace siglos.

Se suele tomar de 3 maneras: óhraert (natural), aunque su sabor amargo no lo hace fácil para todos, hraert (con leche) hraeringur (mezclado). Este último es el más popular y las posibles mezclas son infinitas: néctar de agave, vainilla, jengibre, naranja, pomelo, granada o cualquier variedad de frutos del bosque, siendo el arándano la más popular. 



Entre las más entrañables tradiciones islandesas está la de los 13 duendes de navidad (jólasveinar), uno de los cuales es el skyrgármur o sea el que se cuela en las despensas de las granjas el 19 de diciembre para darse un atracón de skyr.

Bacalao vikingo


El bacalao evitó que los vikingos sufrieran de raquitismo a causa de la poca luz solar que recibían.

Hueso de bacalao encontrado entre el barro de los muelles portuarios de la antigua ciudad danesa de Hedeby (actualmente en territorio alemán). Tras los pertinentes análisis de ADN, se ha fechado entre el 800 y el 1000, encontrando que, genéticamente, es similar al bacalao de las islas Lofoten.

Actualmente se sigue secando el bacalao en grandes tendederos en el archipiélago de Lofoten, dejándolos expuestos al aire frío. Toda aquella pesca acumulada servía de alimento para los navegantes de verano, creando posiblemente una ruta comercial desde las Lofoten hacia cualquier mercado vikingo.

Whisky Loki

In March, Highland Park unveiled Loki, the second release in the Valhalla Collection of four limited edition single malt whiskies. Loki follows on last year’s Thor, a 16-year-old whisky with a strength (52.1% ABV) and character befitting its Asgardian namesake, the hammer-wielding god of thunder. Loki was portrayed in Norse mythology as a shapeshifter and trickster, and the adoptive brother and archenemy of Thor. Loki’s treachery was foretold to one day bring about the fall of the gods in the great battle of Ragnarök.
The Valhalla Collection is named for the legendary “hall of the slain” that’s located in Asgard and ruled by Odin. The Nordic inspiration is no coincidence. The Highland Park distillery is the northernmost distillery in Scotland, located in Kirkwall, Orkney. The Orkney Islands were under Norwegian rule for nearly six hundred years, and today the Viking presence can be felt in everything from widespread place names to runic inscriptions.
Loki is a 15-year-old single malt bottled at 48.7% ABV, matured in both traditional Spanish sherry casks as well as heavily peated casks. As he did with Thor, Highland Park whisky maker, Max McFarlane, has once again created an expression that represents an individual’s personality traits, while retaining the signature Highland Park house profile.

The golden-hued whisky offers a light nose of bitter orange peel, baked apple and lemon zest. On the palate, the peated cask asserts itself with prominent smoke, along with notes of citrus, sea salt and dark chocolate. The finish lingers with cloves, hickory and vanilla, with hints of honey and oak. Loki is a superlative and complex whisky, every bit the “shapeshifter” that’s promised in the press materials.
The Valhalla Collection is aimed squarely at the collector’s market—word is that each release will be increasingly limited, with pricing to match. Thor was limited to 23,000 bottles worldwide with a SRP of $199. Loki is limited to 21,000 bottles and is available through select whisky retailers, at the Highland Park distillery, and on the Highland Park website at a SRP of $249.

Provisiones para un viaje


Estos son unos ejemplos de la comida que podían llevar los vikingos en sus viajes. En los barcos iría almacenada en arcones, barriles, cestas, cajas, vasijas; en los viajes a caballo, en sacos; y en los viajes a pie, en mochilas.

Se corta la carne de cerdo ahumada y se fríe en una sartén. Añadir la cebolla picada y mantener la cocción hasta que esté dorada. Después echarlo en un bol y mezclar con suero de leche, sal, harina de cebada y harina de trigo. Formar la masa en bolas y luego en panes planos. Hornear las galletas en una sartén seca sobre el fuego hasta que estén completamente secas y duras. Estas galletas tienen vitaminas, minerales, grasas y se pueden almacenar durante mucho tiempo. El suero de leche acidulada tiene un efecto de conservación.

Odin Brewing embraces the exploratory spirit of the ancient Vikings. 


 We set sail in December 2009, during the height of a global economic storm, and have quickly become one of the fastest growing breweries in Washington, with our beer is now sacking and pillaging cities throughout Washington and British Columbia. We have taken a different tack than many new brewers, and rather than going for a number of very big, single batch beers, we are focused on food-friendly beers in a smaller lineup that is readily available year round. We realized a long time ago that food-friendly by no means needs to be less flavorful, and we actually add ingredients to widen the palate of our beers above and beyond their original styles.

The Norse culture of the early middle ages had a rich and complex set of gods.  The chief of all the Norse gods was Odin.  He is usually pictured as an old, long-haired and one-eyed wiseman, as legend holds that he sacrificed one of his eyes in order to drink from the fountain of all knowledge and wisdom.
More relevant to us however, Odin once transformed himself into an eagle and flew in to the land of men.  Sprinkling “magic dust” on some clay vessels that were storing the grain harvest from that year, this “magic dust,” along with some water transformed the grain into the first beer.  Hence, Odin gave the “Gift” of fermentation to mankind.  Our beer is a tribute to this rich and complex mythology and a ‘Thank you’ for his gift.
Odin’s Gift – Nordic Amber Ale is a bold yet balanced filtered ale that can be paired with a variety of great foods or enjoyed by itself. It is brewed in small, hand-crafted batches with just the right amount of hops and juniper berries to deliver a unique and fresh aroma, flavor and finish.

Tasting Notes:
Aroma – dark fruits and port-like notes
Top note – strong maltiness and some molasses
Middle note – malt sweetness and banana
End note – light tartness and wood
Color – dark nut brown
Thor was arguably the most loved, admired and feared of all the Norse gods.  We all know of his powers over thunder and lightning, but there is a story in the Poetic Edda that we feel is much more appropriate.  As the tale goes, Thor woke one morning to find his hammer, Mjolnir, missing.  With the assistance of Loki, Thor quickly discovered that his hammer had been stolen by Thrym, the king of a race of Giants, and that his only means of retrieval of Mjolnir, was to have Freya agree to become Thrym’s wife.  Now while Freya was promiscuous, even she had her standards, and after refusing to take part in the exchange, Thor dressed in a bridal gown and veil and presented himself in the role of Freya.  Thrym bought in to the ruse, and upon presenting Mjolnir to Freya (secretly Thor) in the exchange, Thor threw off the veil and gown and destroyed the Giants en masse.  I guess what we are trying to say, is that behind our beer’s thinly veiled and beautiful facade, lay a full bodied ale that can pack a punch!
Thor’s Equinox – Belgian Strong Ale is a brew that is big in flavor without the chewy body holding you back from finishing the whole glass. We have stepped back from the emphasis on yeasty phenols to showcase malt and a unique woody note in the finish, creating a beer that is still Belgian, yet can satisfy stout and strong porter lovers as well.

Aroma – grainy malt with Northwest hop aroma
Top note – earthy bite
Middle note – citrus and light creaminess
End note – hoppy tang, wheaty texture
Color – light straw.
Among her many talents, Freya was a shape-shifter and could take on multiple forms.  Our Viking Gold pays homage to this, as the beer represents a subtle shift to Freya’s Gold Kolsch Style Ale (but still enough so to disguise the beer as something very different).  The result is an ale that is now capable of dealing with spices, creams and heavier sauces.
Viking Gold – XPA (Extra Pale Ale) Is a ‘best of all worlds’ beer. Using American and German malt and hop blends, this brew takes on a unique Craft/Import blended style with a rich malt forward aroma, a full flavor of citrus and light bread, and a combined bite of yeast, noble hops and faint wheat that quickly passes to a tangy, very refreshing finish.

Cerveza: Dragonhead

Cerveza de las islas Orcadas



Dragonhead is a legendary stout: dark, intense and fully-flavoured, it is our tribute to the Vikings and their cultural legacy in Orkney.

On the nose, this black stout has a smooth roasted malt aroma giving bitter chocolate, dark roasted coffee and Smokey notes balanced by hints of spicy Goldings hop.

On the palate, the dark roasted malts combine to give a rich, rounded palate with chocolate, toast and nut flavours, with a satisfying spicy hop finish.

Appearance
A black stout, with a deep copper-brown tint, displaying a tight, smooth, tan-coloured head

Aroma
Bitter chocolate, roast coffee, smokey flavours, moderated by spicy dark fruits

Palate
Dark roast malt flavours with hints of chocolate, coffee and toast; a big, rich, sweet, round mouthfeel balanced by a lasting hop bitterness

Key Ingredients
Roast barley, chocolate malt and wheat give this beer its smooth, full-bodied roasted character; Goldings hops combine with the malt flavours to deliver the lasting almost smokey bitterness.

Whisky Thor

Thor represents the first coming for Highland Park’s stunning Valhalla Collection; a range of four unique whiskies, released annually, taking inspiration from the legendary Nordic gods of old. Not for the faint hearted, only those brave enough to accept the challenge of Thor shall be rewarded with the ultimate experience; a whisky of divine power.

In honour of this great warrior, and in celebration of its own unwavering Norse heritage, Highland Park brings you Thor. With a natural strength like its namesake, drawing influence from the environment unique to Orkney, Thor is a truly elemental spirit. Distilled where sea turns to ocean, this 16 year-old single malt is a meeting point of nature’s forces, exuding a dynamic and bold character on the surface, but with an unexpected softer side at its heart. Bottled at a robust 52.1% ABV this limited edition whisky (23,000 bottles worldwide) comes housed in a unique wooden frame, which echoes the fearsome contours of a traditional Viking long ship.

Appearance: Rich amber, with an iron ore glow 

Nose: Concentrated and forceful, with an explosion of aromatic smoke, pungent fresh ginger, antique copper, stewed plums, and golden syrup. With water, earthy notes emerge, like a garden after a heavy rain shower. 

Palate: Thor’s high strength grabs the palate and refuses to let go. Initially dry, with fiery gingerbread then vanilla, blackberries, fresh mango, peach and hints of cinnamon. As its big flavours swirl around the mouth, some softer, sweeter notes develop, giving Thor and unexpected layer of complexity and depth. 

Finish: The finish thunders on, leaving behind lingering notes of sweet vanilla and an intense spiciness.

Whisky Hjarta, de las islas Orcadas





Hjarta is a natural strength 12 year old Highland Park expression available only from the distillery, in our on-line shop and in Scandinavia, limited to approximately 3,900 bottles. Orkney has never forgotten its Scandinavian heritage; Hjarta is the ancient Norse word for ‘heart’ and the whisky has been launched to mark the total refurbishment of our visitor centre, itself a celebration of the rich history of the Islands.

The whisky has been created by Max MacFarlane, Whisky Maker, and is bottled at 58.1% ABV.

TASTING NOTES:

Appearance: Deep amber, clear and bright.

Nose: Close scrutiny of this intense 12 year old natural strength malt reveals a glorious combination of rich, dried fruits, aromatic spice and heather, caramelised pineapple and fresh lemon peel subtly intertwined with hints of delicate smoke.

Palate: Rich flavour delivery, mouth-coating silky vanilla sweetness and hints of coconut converging in an exquisite balance of sweet, heather peat smokiness.

Finish: Long, gentle and smoky.

Cerveza de las islas Orcadas: Skull Splitter


Skull Splitter is our strongest ale: which is named after Thorfinn Einarsson who was the 7th Viking Earl of Orkney. Sophisticated, satiny smooth with a deceptively light character, it is a tribute to our colourful forbear.

On the nose, this strong beer has a fruity malt character, with hints of dark fruit, spicy hop, dates and figs.

On the palate, rich and complex with sweet toasted malt, molasses, fresh and dried fruit and hints of warming spices.

Appearance: Deep ruby red with a frothy, eggshell head. Sparse lacing is left on the glass.

Aroma: The malt overwhelms the hops, as with most ales from Scotland. Aromas of toffee and filberts are present.
Taste: Rather sweet, but not sickeningly so. Toasted malt is the predominant flavor with brown sugar and just a touch of European hops on the finish.

Mouthfeel: Viscous and clingy on the palate, yet finishes fairly clean for a sweeter beer.

Cerveza Eric's Red (Canadá)



ERIC'S RED CREAM ALE

This smooth cream ale is brewed to celebrate Leif Ericson's historic voyage to North America a thousand years ago. Quidi Vidi Brewing Company was awarded the Silver Medal designation for their Eric's Red Cream Ale at the 2001 World Beer Championships held at the Beverage Testing Institute in Chicago, Illinois.
The Beverage Testing Institute is an international reference organization for the brewing industry. Quidi Vidi Brewing Company President David Rees explains that the Silver Medal award is an extremely prestigious benchmark that attests to the quality of this distinct Newfoundland beer within the global market.
This smooth cream ale is brewed to celebrate an extraordinary milestone for Newfoundland and Labrador. One thousand years ago, Lief Ericson made his historic voyage to North America, landing on our shores and founding the first European outpost in the New World at L'Anse aux Meadows.
Eric's Red is our way of toasting this historic milestone. Specially formulated in the year 2000, it is our tribute to one of the greatest explorers of all time. At 5% alcohol, this 100% natural cream ale is crafted with the finest Two-Row Pale, Crystal, and Carastan Malts. Gently hopped, it imparts a substantial but smooth creamy taste with a truly satisfying finish.

Viking Brewing

Viking Brewing Company, established in 1994, was the first microbrewery in Northwest Wisconsin. Viking brought back that time-honored tradition of a local, family run brewery that takes pride in brewing unique and outstanding beers; over 22 different styles. 

Year Round Beers


Blonde is a Rye Pilsner brewed with flaked rye. Nice subtle aroma of buttery and toasted malts, aromatic hops, along with some floral, citrus and honey notes. The taste starts crisp with the rye and ends with a nice spicy hop dry finish.










Vienna Woods is a Vienna Lager with a subtle, a but complex flavor of roasted, sweet malts and a calm bitterness with dulled orange and deep woodish tangs with a crisp, lightly creamy finish.


CopperHead is a Märtzen, ruby lager brewed with caramel malts producing sweet, buttery, nutty & fruity flavors. It also has a slight burnt orange with a dark coppery influence.










"Breakfast Beer!" Whole Stein a coffee, oatmeal, milk porter. Sweet dark roasted malts, dark chocolate tanginess and lovely notes of oatmeal and molasses then finishes with a nice rich easy coffee flavor.

Big Swede is a Swedish Imperial Stout brewed to the maltier side. Nose of vanilla, coffee, currants and wood. Nutty & creamy, a hint of molasses, dark fruits, carob, & a whiff of whiskey.





Seasonal Beers
January
Mørketid (The Norwegian name for midwinter polar darkness) is a German Schwartz beer (black beer) Sweet chocolaty nose with slightly spiced notes up front leading to maple and molasses flavors and a hint of nuts with a quick dry finish.








February
Invader is a Doppel Bock with a caramel apple laden nose and aromas of allspice, heather and wildflowers. The taste starts with a bold caramel malt and apple character with a woody and floral finish.
March   
Honey Pale Ale is an English-style brewed with local Basswood honey from the Talking Oak Farm in Prairie Farm, WI. It is a clear golden color. Flavor of soft honey English toffee with a floral & grassy bitterness rolled outward, leaving grasses and honey at the finish.








April    
Lime Twist is a light and refreshing American style wheat beer made with a twist of lime. It is very refreshing - a perfect summer beer.




July
Dim Whit is a Belgian-style Whit Beer spiced with coriander and ginger. Golden Color with a huge airy meringue white head. The flavor is coriander, toasty pale malts, nice ginger, and yeastywheat. Clean, refreshing, & light.
August
Abby Normal is a Trippel Abby-style Ale. Flavor is sweet toasted buttery malts, honey and some candi sugars. Also spicy with notes with green apples and molasses and a floral hop garni.








September
Rauch is an Oktoberfest beer made with Beechwood smoked malt. Mild aroma is sweet with a bit of smoke and fruit. Flavor is nice, sweet and smokey, some dark fruit and a smoke in the finish.
November
JuleØL is a Scandinavian Christmas Beer - a light lager delicately spiced with cinnamon, nutmeg & sweet orange rind. Slightly sweet light citrus fruit followed by a mild dry spiced finish.








December & January
Wow! An Awesome Beer! Hot Chocolate is a Chocolate Stout brewed with lots of Fair Trade organic cocoa & cayenne pepper. A real soft beer with light roasty flavors with good dark chocolate, & coffee notes and a nice, spicy, peppery finish.

22 Oz. Bottles


Mjød is a Honey Brackett; the 1st brewed in the US. It is like a Mead - a honey wine with malt. Flavor is a sweet honey. Light caramel malts. Grassy hoppiness. Apple, orange, semi-tart tangy finish.
Mjød is special to us at Viking because it was the first beer that we brewed.

HoneyMoon is our 2nd Brackett. Light with delicate flowery flavors. It is much like a light, honey champagne. The tradition of the honeymoon began with the wedding couple drinking honey wine for one month (moon).


Berserk is an English Barleywine. Intensely malty, and fruity with notes of plumb, apricot, raisin, apple & a hint of vanilla. Finishes with a lingering earthy bitterness.

Berserk was named after the Berserkers who were the fiercest of all of the Vikings, which is also where the term "Going Berserk" comes from.




Preparation of a bland beer (patented):
A method of preparing a lager beer having a mild, bland, less aromatic character comprises conducting the fermentation of the wort for about 60 to 200 hours under suitable conditions to maintain the dissolved carbon dioxide concentration in the fermenting wort at about 2.1 to about 4.0 cc of dissolved carbon dioxide per cc of wort. In a preferred embodiment, the fermentation of the wort is conducted at a temperature of 60 deg. to 85 deg. F. with an appropriate overpressure of from 5 to 40 psig of carbon dioxide. The beer thus obtained has a mild character and can be used, if desired, as a base for flavored beverages.
